The man, believed to be the only suspect, entered the Golf House Hotel in Ballarat North just after 12am and approached hotel staff.
Police say the man threatened the staff members, brandished a knife and demanded cash.
He was handed an unspecified amount of cash, before fleeing the scene.
No staff members were injured during the armed robbery.
“He was last seen entering parkland adjacent to the hotel,” a police spokesperson said.
“We believe the male is the only offender but investigations are ongoing.”
Detectives from the Melbourne-based Armed Crime Taskforce took over the investigation yesterday.
They did not release a description of the offender.
Anyone with information on the robbery can call Crime Stoppers on 1800 333 000.
