Police said the older model Holden Commodore was travelling south on Main Lead Road when the crash occurred about 1.40pm.
The male driver, believed to be a 56-year-old Beaufort man, was the only occupant in the car and died at the scene.
No other vehicles were involved in the crash, which also sparked a small grass fire that was contained quickly by CFA crews.
SES rescue crews from Ararat attended the scene, along with CFA units from Beaufort.
Ballarat and Beaufort police controlled traffic alongside CFA volunteers and members from Ballarat.
The cause of the crash is still under investigation but more than 50 metres of skid marks were visible on Main Lead Road leading up to the collision.
Police will prepare a report for the coroner.
The fatality takes Victoria's road toll for 2013 to 30.
It was 38 at the same time last year.
