The 20-year-old, who is studying primary teaching at the Australian Catholic University, is hoping to raise awareness about extreme poverty. “I will basically be just eating rice, pasta and some sort of cheap vegetable like pumpkin,” Ms Marquand said.
“I love curries, so a lack of flavour in my diet more than anything is going to be hard.”
Part of the Oaktree Foundation Live Below the Line campaign, Ms Marquand has already raised $4000.
Oaktree Foundation is an aid and development organisation run by volunteers under the age of 16.
The Ballarat resident said she hoped increased awareness would bring increased action.
“The money goes to an education program in our poorest neighbouring countries like East Timor, Cambodia and PNG,” she said. “The main part of the campaign is to develop an understanding of the day-to-day struggle that people who live in extreme poverty face,” she said.
“I will never look at $2 the same way.”
