“I just want to do something different,” owner and cook Josie Sangster said.
“I like making food that people love, but putting my own creative edge on the recipes.”
Ms Sangster, who has owned the Ballarat gift, accessory and shoe store since 2005, said she was excited to expand her business.
“I wanted to open the cafe in 2005, but it never happened,” Ms Sangster said.
“We expanded the business to other stores in regional towns, so there was no time for the cafe after that.”
But after a change in circumstance last year, Ms Sangster decided to live out her cafe dream in Ballarat.
The passionate foodie has been preparing homemade meals for her customers since the end of March.
“Sunday is my invention day, so that’s my time to try new things in the kitchen,” she said.
“I am always cooking something, whether it is Asian, Italian or Moroccan.”
Everything from Thai green curries, gnocchi and New York cheesecakes are prepared in the Sangster family kitchen before service that day.
“I want to make creative, relaxed food,” Ms Sangster said. “I have been cooking the Thai green curry for the family for years.”
Ms Sangster said she loved her job.
“It is fulfilling. So far, it is paying off,” she said. “I love cooking because it comes easy to me.”
