Brendan Gamble, 20, now of Portland, was employed at the The Bottle-O bottle shop in Sebastopol when the offending began in May last year.
Ballarat Magistrates Court on Thursday heard there was video evidence showing the thefts, which totalled almost $800.
Police prosecutor Leading Senior Constable Steve Kent said on one occasion Gamble stole eight 10-packs of Jim Beam cans. In another theft, he stole four 10-packs of Jim Beam cans and one 24-pack of Jack Daniels cans.
Interviewed by police after his arrest, Gamble made admissions to the thefts.
Pleading guilty to the thefts and representing himself, Gamble said he wanted the matter adjourned so it could be heard alongside separate driving offences which are scheduled to be heard in the Portland Magistrates Court on October 14.
Magistrate Andrew Capell agreed to adjourn the matter until October 14 in Portland.
