Federation University Australia’s third-year commercial cookery class will have free rein of the Prospects Restaurant menu as part of their final assessment.
About 30 students will prepare as many dishes as they choose for a group of about 60 people.
“They are now qualified chefs,” teacher Ryan Pearce said.
“This is their chance to go for it.”
Students will be assessed on their time management, work flow, execution and technique, hygiene, presentation and team work.
Mr Pearce said students could cook anything they wanted from a selection of provided ingredients.
About 10 dishes will be served per table.
“In previous mystery dinners, the students have had to include a key product,” Mr Pearce.
“They won’t need to do that on Thursday.”
Federation University produced Californian-style golden ale will also be on tap for the dinner.
Mr Pearce said all students had since found employment in hospitality.
Students have previously prepared Japanese, Spanish, German, Jamaican, Thai, modern Australian and French cuisines.
