The man and two children in the car walked away from the crash, which could have ended much differently.
Potato farmer Ron Quick, in whose paddock the man landed, said the car came close to two groups of trees.
"He's come off the road before the paddock and then launched into it over the fence," he said.
"He's come pretty close to those trees there and some further up too.
"He must have got some air."
Mr Quick said the man was stuck after the crash because his roof rack had come down and blocked the driver's side door.
A mound just before the damaged fence had launched the Nissan ute into the air before it came down among the potatoes.
Paramedics attended the scene, but did not take anyone to hospital.
