The breakfast burrito – "smashed avocado, coriander-and-chilli salsa, fresh tomatoes, baby spinach, a whole-egg omelette" – is one of five courses Mrs Stewart's team will serve at Breakfast on the Tan, next Sunday for the Melbourne Food and Wine Festival.

The event is a sort of breakfast on the move, says Mrs Stewart, with the five-course breakfast dotted around the Tan.

"I'm hoping that you almost don't realise you've done the Tan", she laughs. "You've done the day's exercise without really noticing."

Mrs Stewart's caterers are also putting together the finishing touches on a yogurt-and-muesli dish, as well as Boston Baked Beans on sourdough and a sweet potato frittata.

The whole event is being run with Diabetes Australia's support which means Mrs Stewart's Healthy Bytes team had to tweak their traditional breakfast recipes just a tad.

"We had to research wraps, for example, to make sure we found a wrap that was low in sodium and fit with their requirements, but also wrap well and hold up and not sort of collapse on people.

"We need to make sure if we're making 3000 of these things if someone eats it 3 hours down the track it's still going to be just as good."

Breakfast on the Tan will be held at the Royal Botanic Gardens Southern Cross Lawn Observatory Precinct on March 15. Tickets are $35, and 5 per cent of proceeds will go to Diabetes Australia – Victoria.
