A BALLARAT late night food spot is proving it’s still the chips, cheese and gravy of city trading.

Gravy Spot will now open during the day to feed hungry CBD workers.
The Lydiard Street store, famously known for its post late night party snacks, recently received a $50,000 makeover.
Owner David Bending said he was excited to make a change to the iconic business after 13 years.
“Finding a sandwich bar, particularly in this area, is hard to come by,” he said.
“It’s really, really exciting (for the business) after 13 years… it’s a nice change.”
Diners will be able to create their own sandwich or wrap and can buy soups and hot specials daily.
Muffins, brownies, pulled pork rolls and coffee and tea can also be purchased.
Three new staff have been employed and the team is also on the hunt for a barista.
But don’t worry, Ballarat’s iconic chips, cheese are gravy is still on the menu.
“It’s quite a Ballarat thing,” he said.
“It was on the menu well before I took over the business.”
Mr Bending said he was a fan of chips and gravy, but didn’t always add cheese to his serve.
"We would get regulars going back to their home towns and asking for chips and gravy with cheese and they were getting odd looks,” he said.
The new venture has allowed Mr Bending to get creative in the kitchen.
The chef by trade has started baking again, with red velvet muffins for sale.
Mr Bending began renovating the store last December, which included stripping the plasterboard and exposing the building’s original red bricks.
New mobile fittings have also been installed in the kitchen, to ease the transition from daytime cafe to late night food spot.
The sleek-looking venue now has a plasma screen TV mounted to the wall and plush seats.
Even the Gravy Spot logo has been redesigned.
“I think it needed to grow up a bit,” he said.
Mr Bending said he was still adjusting to his new start time.
"I was starting at 10pm and finishing at 6.30am or 7am in the morning,” he said.
“The early mornings are a challenge. I’m now starting at the time I used to finish work.”
Gravy Spot is located at 34 Lydiard Street North in Ballarat.
The venue is open Monday to Friday between 8.30am and 5.30pm during the day trade.
At night, Gravy Spot is open Wednesday to Sunday 10pm to 5am.
