The man was hit by a Mitsubishi sedan as he was crossing Murray Street in the town of Colac about 7.15am on May 26.
The victim, from Mount Martha, was taken to the Colac Hospital in a stable condition with bruising to his head, an Ambulance Victoria spokeswoman said.
But his condition took a drastic turn for the worse and he was later transferred to the Alfred Hospital in a critical condition, where he died the following day.
Leading Senior Constable Paul Turner said police were continuing to investigate the circumstances of the collision.
The sedan had been turning from Queen Street into Murray Street when the incident occurred.
The man's death brings the state's road toll to 124, compared to 107 at the same time last year.
