Liam Scott, a second year apprentice from The Perfect Drop in Daylesford, broke his right hand while snowboarding a few weeks ago, then went on to win the live lamb, beef and veal apprentice challenge.
“The team (at The Perfect Drop) was pretty impressed,” the 20-year-old said. “I’ve never done any competitions before so it was scary going into this big kitchen.”
Mr Scott delighted judges with a cedar wrapped lamb loin and flower herb salad.
“You’re judged on how well you’ve worked as a whole so your work flow, preparation, cleanliness, presentation and the taste of your dish. Mine was very simple – there were a lot less components compared to others.”
The Perfect Drop also achieved bronze in the Battle of the Pacific team challenge.
Fine Food Australia, which took place at the Melbourne Convention and Exhibition Centre, attracts more than 1000 exhibitors worldwide.
