English-born chef Gavin Draper has written a cookbook that offers recipes for gluten-free foods from traditional diets around the world, re-imagined in a modern style.
Gavin says A Gluten Free Repertoire is a cooking resource for lovers of gourmet food who are looking for innovative, healthy options.
Originally from Newcastle in England, the proud ‘Geordie’ was classically trained in French cuisine and has worked in England, on the continent – and on the QEII.
He’s been in Ballarat for two years, working as a trainer and writing his blog www.glutenfreerepetoire.com.
He says the idea behind is book is that gluten-free food is often given a ‘bad rap’ in the media.
“I want people to enjoy really good tasty food. If it doesn’t have gluten in it, then more people can take part in eating it,” says Gavin.
He says he is one of the people who fit into the category that, while he doesn’t have a coeliac disorder, eating gluten-free meals means that he feels more comfortable.
“If I go gluten-free, I feel a bit ‘lighter’,” he says. “We’re not as bad as pescetarians...
“I love to cook for and with my daughter. The idea behind the book was to dispel the idea that gluten-free food is only for people with a food intolerance.
“All around the world, people have always eaten a wide range of grains and foods with health benefits and the food is still delicious. It just happens to be gluten-free too.”
In a truly local twist, Gavin has partnered with local vendors Wilsons, butcher John Harbour and ceramic artist Ruby Pilven, as well as photographer Zara Albion-Lawson, to create the images for the book.
A Gluten Free Repertoire is seeking crowdfunding through Kickstarter. Gavin Draper hopes to raise $20,000 towards publishing the book, and has raised $4,000 so far.
