The thief was caught on camera wheeling the stolen meat away in a milk crate.
The neat and tidy thief, who stole about $600 of meat, had also broken into the vegetable store room, Royal Mail Hotel owner Tanya Farrell said.
They only stole three things; that was slabs of meat, Ms Farrell said.
One was scotch, one was porterhouse, and one was rump steak.
He left the place so nice and neat and tidy so no one really noticed until they went to get the meat, he just picked up the whole piece and left with that.
Just weeks before the Christmas Eve burglary the publicans car windows were smashed.
Vandals had also recently broken in and wrecked the pubs yard, Ms Farrell said.
This one is a little different, its quite precise, he wanted some meat and he knew where to get it from.
I just think its something bulky he could get a bit of cash for, they did try another coolstore which just has veggies in, they broke the lock on that but I think they got in and said I dont want that.

A cool, calm and collected burglar has flummoxed owners of a Maryborough pub after making off with $500 worth of prime cuts and a slab of pre-mixed bourbon and cola.
Cambrian Hotel owner Jacki Kelly said the thief, who also stole a slab of Jack Daniels and $1500 belonging to the pubs social club, appeared to be looking specifically for steaks.
About 10 kilograms of steak 5 kilograms of porterhouse and 5 kilograms of scotch fillet were stolen overnight on December 8.
Neither the publicans nor the police recognised the man from CCTV footage, she said.
He just came in, he was just so cool calm and collect, he just wandered around it was just so bizarre, he pretty much knew where he was going.
(The police) just said it was really eerie ... they said it was really bizarre that he was so cool, calm and collect.
Our kitchen is pretty shut off to the public but he knew just where to go in for the steak.
The social club still managed to pull together for their Christmas event after losing $1500 from the kitty, Ms Kelly said.
The publican had compared the images with the footage of the Royal Mail Hotel robber and said they appeared to be a different man.
