It is believed the car was travelling along Creswick-Bungaree Road about 4.45am when it veered off the road and struck a tree, a Victoria Police spokeswoman said.
She said the driver, who was the only person in the car, was removed from the vehicle and taken to hospital with non-life threatening injuries.
A CFA media spokesperson said fire brigade units were called to the rescue about 4.50am and arrived shortly after at 5am.
The rescue took less than 20 minutes, but seven trucks from four fire brigades attended the scene.
Ballarat City provided a pumper, Ballarat provided a heavy rescue vehicle and specialist transport vehicle, Glen Park provided a tanker, and Creswick provided a field command vehicle, light pumper and tanker.
A spokesperson from Ambulance Victoria said paramedics were called to the scene of the crash and one person was taken to Ballarat Base Hospital.
She said the man was in a serious condition with spinal injuries.
