This Good Food Month he plans on sharing what he learnt with Ballarat.
It will form part of the restaurant’s Dumpling Discovery Day set for Sunday, November 8.
Chef Dong said the day will mirror last year’s popular event with new dumplings on the menu for a touch of difference.
He said guests were in for a treat with 12 different courses of dumplings, including dessert dumplings, planned for this year’s menu.
Talking about dumplings, chef Dong said much of his dumplings – which sold faster than they could be made at the Family Hawkers Market earlier this month - have come from a combination of techniques learnt from his grandmother from an early age and, from working in Australia for the past seven years and picking up what flavours foodies enjoy most.
“We hand-make them every day. Making them fresh means they’re more juicier and more tastier,” he said.
“The pastry is very thin and the mince in the middle pulls everything together. They’re similar to a pie or sausage roll but with less oil and they’re more healthier.
“That’s why a lot of people prefer dumplings.”
Urging anyone who hasn’t had a chance to taste his dumplings, chef Dong said the event would be the perfect opportunity to taste-test a variety of different dumplings on offer at the popular Camp Street restaurant.
“You will get a taste of everything,” he said.
Fu Man Lou will host two dumpling degustation sessions, one set for 12pm and another at 6pm.

Other Good Food events taking place this week include Yellow Espresso’s Super Food Brunch on Wednesday, Billy’s Bistro and Bar’s Mediterranean Chefs Dinner and, Red Lion Hotel’s Beef and Beer event on Thursday.
The weekend will kick off on Friday with The Lane International Fest, and Little Bird Cafe will be hosting Fancy Nancy’s Kitchen Tea on Saturday.
The foodie celebrations will continue on Sunday with Hop Temple’s Australia versus New Zealand battle.
