AS former residents of St Kilda, husband-and-wife team Leo and Santina Trigazis of Yellow Espresso have had their fare share of good coffee.

When they opened Yellow Espresso on Sturt Street last year the idea was to bring a slice of Melbourne’s world-class coffee scene to Ballarat - and so far, so good.
“The coffee part is big drawcard for us,” says Santina, a former Ballarat girl who has returned after a ten-year absence.
Popular brunch choices for the hungry and health-conscious include Yellow Espresso’s Acai berry bowl or avocado smash made with Meredith goats cheese.
Free-range spicy baked eggs or corn and zuchinni fritters, are also popular with brunchers. Bread is supplied by La Madre bakery in Geelong, as are the croissants, danishes, muffins and cakes.
Coffee is key to Yellow Espresso’s offering and, unsurprisingly, Trigazis has done her research:
She uses coffee supplied by Melbourne specialty roaster Axil Coffee, a brand widely known and used as specialty coffee in Melbourne and surrounds, she explains.
“A lot of people have been really excited to see Axil in Ballarat,” says Ms. Trigazis, adding that all their coffees are made with Inglenook Dairy milk.
Brunch is what Yellow Espresso does best and this will be on show for their Good Food Ballarat event on November 4, showcasing the café’s delicious superfood brunch offerings.
Possible dishes include a twist on their Acai Berry Bowls and organic green-tea powder latte’s known as Matcha Lattes.
In the meantime, the Trigazis’ are thoroughly enjoying being a part of the city’s reinvigorated food and coffee scene.
“We came in at the right time when Ballarat is really starting to grow that café scene and people are really getting interested in specialty coffee. So many new cafes have popped up in the past year. I think it’s a really buzzing little scene at the moment. It’s really exciting.”
