The restaurant’s head chef, Walter Wilson, plans to showcase some of the more uncommon Australian foods and flavours he has come to love during his time in the country.
Jackson’s and Co sales and event manager Jennifer Illig said the result is a “Taste of Australia” three-course meal using native Australian ingredients.
“Walter is originally from Canada ... he has traveled all over Australia in his time here and has an appreciation for all the amazing produce and flavours we have access to,” she said.
Friday night’s menu will include rare kangaroo on toasted Illawarra sourdogh canapes, an entree of crocodile with soft boiled quail egg and shaved asparagus and, macadamia-crusted lamb with crisp potato and river mint for main.
Dessert will feature a chocolate and black sapoda pudding and all meals will be matched with wine.
“It’s more about exploring new tastes and flavours that have been around for decades however, unappreciated due to their complexity.”
