It’s all part of Prospects’ - the training restaurant at Federation University Australia’s SMB campus – Good Food Ballarat six-course degustation dinner set down for Monday, November 30.
Created by Aureate Restaurant head chef and FedUni guest lecturer Ryan Pearce, the dinner will see a team of celebrity chefs paired with students to create a never-before-seen dining experience in Ballarat.
Mr Pearce said the event aims to not only create a great dining experience for local foodies, but also offer students the experience of working in the hospitality sector.
“By creating this event for the apprentices and Ballarat, Federation University and Aureate Restaurant are bringing the importance and excitement of amazing food, local produce and great dining to the education arena in Ballarat,” he said.
“In this manner our industry colleagues can reach out to apprentices and help inspire potential career paths and, best of all the Ballarat public can be a dining spectator to this whole collaboration.
“This is about fun, inspiration and trying something new. It is about education, industry and community coming together to drive the future of our budding workforce in hospitality.”
He said the guest chefs, who often never get the chance to come to Ballarat, have created dishes including local produce specially for the event.
“We can obviously expect a huge variety of produce that will be mostly local with a touch of foraging here and there ... The exciting element of this dinner is the diversity of cookery styles and cuisines that will be put on show for all diners to marvel and delight at,” he said.
“I’m not kidding, this is a dinner with some serious firepower in the kitchen and some really fun and exciting wine matching to boot.”
Without giving away too much, Mr Pearce said guests can expect to see Bellarine scallops, Meredith feta, Sashimi grade ocean trout and local game on the menu.
“Each chef will come out and give a brief synopsis of their dish once it has been served and give us a little insight into what they wish to achieve with that particular dish,” he said.
“Matt Dempsey (Gladioli) and Matt Germanchis (Pei Modern) have gone all C.I.A. on me, all I know is that they are prepping a particular component of their dish in their own restaurant and then bringing it to Prospects to finish with the students.
“As for dessert. All you need to know is that Phillipa Sibley and Daniel Southern are in on it together so its going to be extravagant and amazing.”
The six-course degustation dinner will be held at Federation University Australia’s SMB Campus from 6pm on November 30.
