The Saltbush Kitchen owner will showcase simple variations in a free demonstration and taster class at Ballarat Library to mark the start of National Reconciliation Week on Monday.
“We’ll be looking at flavours we all know really well and alternate bush flavours, for example, instead of lemon, subbing in lemon myrtle,” Ms Corcoran said. It’s a really nice way to show how easy it is to incorporate Australian flavours into cooking.”
The Library will also showcase Aboriginal storytime sessions, Aboriginal astronomy and art with Pitcha Makin Fellas. The contemporary Australian bush foods sampler is at 1pm.
