The powerful forward returns after spending a season with Stirling in the Western Australian Amateur Football League B division, where he was an assistant coach.
His will complement the presence of Bryson McDougall in attack.
Whittaker has played more than 100 senior games with the Kangaroos and twice been their leading goalkicker.
He will be part of a reshaped club coaching panel.
Whittaker replaces Chris Banwell as under-18.5 coach, with 200-game veteran Banwell promoted to a senior assistant coaching position alongside Jake Bridges.
Meanwhile, a former Sunbury star Jamie Lobb has been appointed Diggers Rest senior coach in the Riddell District league.
Lobb was a premiership player with Sunbury in 2012.
