The month-long event will celebrate Ballarat's food offerings, craft beers, boutique wines and locally sourced produce during more than 50 events throughout May.

A selection of events throughout the month will celebrate Ballarat's long history of pubs and hotels.

The Golden City Hotel will host a Sunday roast on the balcony on May 19. A chef will cook a whole lamb on a spit and carve it in front of guests.

The event will showcase local produce from Sinclair Meats, Blue Pyrenees Estate and Peach's Fruit Market.

Golden City Hotel director Tim Kearney said participating in Plate Up Ballarat provided an opportunity to showcase what their chefs could do outside of the day to day menu while celebrating produce from the region.

"Until you participate in Plate Up you don't realise how many suppliers and producers are around," he said.

"I was blown away by the amount of producers. We are used to certain suppliers and providers we have been using for years so we are not aware of these new ones that come up every year. Being a part of this event really helps you engage with local producers in the region. We are already using some of those new suppliers now and it is only going to increase after this year."

Golden City Hotel's Plate Up Ballarat celebration comes after the completion of renovations at the site last week, creating two new function rooms and a new lounge area with a fresh outside colour scheme that is true to Ballarat's heritage.

Mr Kierney said pubs and hotels have a strong history in Ballarat but needed to change and adapt to keep up with current consumer demands.

"There needs to be diversity in your offering and a number of reasons why people will come to your hotel. Putting on events like Plate Up showcases what we can offer here in Ballarat," he said.

"People don't have to travel to Melbourne for a good dining experience, it is all right here in Ballarat."

Plate Up Ballarat festival director Kate Davis said the transformation of hotels like The Provincial and The Canberra Hotel reflected bigger change in Ballarat's food scene that was making the city known as the 'culinary capital of the west'.

"Our events showcase diversity and quality - that's why we started Plate Up Ballarat," she said.

"We wanted to put the spotlight on our venues to show right now Ballarat is booming and there is a revolution of venues that are popping up and longstanding ones that are thriving.

"We want to see community sense of pride where our locals do want to stay to enjoy what we have here and visitors too can come every single day of the week and enjoy Ballarat's hospitality offerings. We need to tell everyone we are leading the regional dining scene."

The Pub with Two Names, Craig's Royal Hotel, The Provincial Hotel, The Western Hotel, The Canberra Hotel, Red Lion Hotel and The Farmer's Arms are other hotels hosting events during Plate Up Ballarat.
