Nesbitt, who was part of the club's 2007 and 2012 Central Highlands Football League flags, makes the move from Casterton-Sandford where he played alongside new Daylesford coach Hamish Jarrad.
Jarrad was announced as the Bulldogs' new leader in October, taking over the reins from Zac Tisdale, who spent two seasons in charge.
The Bulldogs are looking to improve on a couple of poor campaigns, with the club's last senior finals appearance coming back in 2017.
Nesbitt's return adds to a squad that has already secured former Geelong AFL player Josh Cowan.
Meanwhile, Daylesford president Carson White has put out the call for a new reserves football coach.
White said the position was currently vacant with club great Rob Rodgers deciding to step down from the job to take up a role on the committee.
