Coward played rugby while attending the school for year 12 in 2015.
He's the ninth Olympian to emerge from St Pat's, joining names like Steve Moneghetti and an impressive list of rowers.
The men's and women's Olympic teams were named on Saturday morning.
Rugby 7s, a modified form of the rugby union with seven players on the pitch for each team and seven minute halves, was first played at the Olympics in 2016 - the Australian women took home a gold medal, defeating New Zealand.
Several other Ballarat connections have qualified to compete in Tokyo, including rowers Katrina Werry and Lucy Stephan, former Clarendon student Stewart McSweyn in the 1500m, 5000m, and 10,000m, and soccer star Kyra Cooney-Cross in the Matildas squad.
Javelin champion Kathryn Mitchell is another hope for the Australian team.
