Of these cases, 149 infections are in children aged under-10.
This comes amid a week in which the state government opened up Pfizer jabs for Victorians aged 16 to 39, sparking a shortage and long waits for COVID-19 vaccine in Ballarat.
UFS' Commonwealth-funded vaccination hub put a stop to first dose Pfizer bookings by late Friday afternoon with its existing supply fully allocated until late in the year.
UFS chief Lynne McLennan has made clear the organisation had urgently called on the federal government to help meet overwhelming demand.
State bookings, which opened on Wednesday morning, had allocations for first dose Pfizer into November via online but some young residents reported earlier luck by calling the coronavirus hotline.
The state government manages bookings and supply for the Ballarat Health Services' mass vaccination hub based at The Mercure, which has been making about 1000 jabs per day.
Victoria's COVID response commander Jeroen Weimar reported on Saturday 37 per cent of Victorians in their 30s had at least one dose while 26 per cent of those aged 18 to 30 had one jab.
Vaccinations have only been open to Victorian adults aged under 40 for three weeks, including two-and-a-half weeks' of AstraZeneca only.
It remains unclear how a push will work to have Victorian year 12 students vaccinated before their exams begin in October.
Mr Weimar said more than 50 per cent of over-60s were fully vaccinated and these numbers were starting to increase.
Over-60s are only able to access AstraZeneca vaccinations.
Mr Weimar urged over-60s who had only had one dose to ensure they book in for a second jab - which was on hold for them.
UFS has confirmed most of its pharmacies across the region will offer AstraZeneca vaccinations from September 6. The Buninyong pharmacy already offers this to clients aged over-60.
UFS pharmacies hope to add Moderna bookings when this vaccine becomes available in Australia, which is likely to be next month.
AstraZeneca booking are still open in the UFS vaccination hub on Dana Street.
Committee for Ballarat number crunching estimates Ballarat, as a region, would need to lift its jab rate to 1500 shots in arms every day to hit the highly-touted 80 per cent fully-vaccinated goal before Christmas.
This is about 400 extra jabs each day.

Victoria's health minister says a lack of supply is continuing to hold back the vaccination program, as the state deals with a fresh cluster in Port Melbourne and a growing outbreak in the Goulburn Valley.
"While we continue to see increasing levels of supply forecast in the coming weeks and months, what we really need is the supply to meet demand now," Martin Foley told reporters on Saturday.
Mr Foley said he wanted the Commonwealth to pay for general practitioner clinics to be open later and on weekends.
Some GP clinics and other pharmacies are offering COVID-19 vaccinations across the Ballarat region.
The health department has been trialling handing out extra jab supplies to a handful of Melbourne clinics, which Mr Foley said has shown clinics have the capacity to deliver more vaccines.
"We are demonstrating, because someone has to, that the GPs can do more," he said.
The news comes as contact tracers deal with a new cluster in Port Melbourne. There are four fresh cases in the area, with exposure sites at a Fisherman's Bend supermarket and a carwash and auto warehouse.
Meanwhile, an outbreak in Shepparton in the Goulburn Valley region has grown to 85 cases, with more than 1600 welfare and compliance checks conducted in and around the town on Friday.
The outbreak has spread to Echuca, after an aged care worker at the Wharparilla Lodge was infected by her partner.
Most of the 88 residents at the home have had both doses of the COVID jab.
About 40 staff have been furloughed, while the aged care worker, who was fully vaccinated, has since returned a negative test.

Victoria has added 64 new COVID-19 infections to its caseload on Saturday, 28 of them involving community exposure.
Health authorities say 49 of the cases are linked to current outbreaks and 36 were in quarantine throughout their infectious period.
The state now has more than 700 active cases with 42 of those in hospital.
Another 372 staff at the Royal Melbourne Hospital remain on furlough due to the outbreak there, but no new cases linked to the cluster have been found.
Victoria managed to administer 35,753 vaccine doses in the 24 hours to Friday evening and conducted 55,333 tests for the virus during the same period.
