One of Ballarat’s most iconic pubs is set to reopen its doors by February with a new European twist after famed artists Yuge and David Bromley announced the team behind Carboni’s Italian Kitchen and The Mercure would lead the venue’s culinary offering.

The Bromley’s purchased the Peter Lalor Hotel (also known as the Royal Highlander) on the corner of Doveton and Mair streets in Febraury and have since given the site an eclectic overhaul.
Venue operator Iaian Gunn and chef Donatello Pietrantuono will take the reigns of the hospitality arm of the pub, which was last open in 2015.

Mr Gunn said there was a great sense of optimism in the hospitality industry around Ballarat and he was excited to be involved in the unique business.
“For a long time we’ve been involved in the rebirth of businesses,” Mr Gunn said. “In collaborating with David and Yuge here, not only is it going to be a feast for the eyes when people come in here but hopefully though Donatello’s effort’s we’ll be able to provide a feast for all the senses.”
All up the Pub with Two Names is expected to provide a 100-seat eating and drinking space, while the former stables area will be turned into a function room.

The couple have also developed accommodation upstairs which will be available in the months after the dining area is unveiled.
Mr Bromley said the new business partners brought an experienced and varied skill set to the pub.
“We have in some ways an unlikely bunch of people but I think that’s what’s really interesting about it.”
