The driver was trapped for 90 minutes after the truck came off the road near Duggan Rd at about 9.40pm.
He suffered multiple fractures, but the injuries are not considered life threatening.
A second person involved in the single-vehicle accident declined to be treated.
A SES spokesperson said the driver had his legs pinned under the steering wheel, but had remained conscious throughout the ordeal while crews worked to free him.
The truck was believed to have been carrying a load from a swap meet held earlier in the day, with many of the goods strewn on the road and in scrub during the accident.
Police, Ambulance Victoria, SES and a rescue support from Bannockburn all attended the scene which was finally cleared just after 11.30pm.
