Yellow Espresso last Tuesday opened its doors and has already been well received by the public.
Co-owner Santina Trigazis decided to revamp the store with her husband Leo, after her father and former Euro 13 owner, Dino Cudia, retired a fortnight ago.
“Once he retired ... we got stuck into the renovations,” Santina said.
“We worked through (the renovations) on Sunday, Monday and opened Tuesday.”
The pair moved from their St Kilda home of 10 years last week to begin their new venture in Ballarat.
“It is a Melbourne cafe in Ballarat,” Santina said.
“We had lived in St Kilda for 10 years and (opening a cafe) was something we wanted to do.”
Santina and Leo used their regular Melbourne brunch dates as research for their cafe.
“We wanted great coffee, that was a must, so we approached Axil Coffee,” she said.
“We loved their cafe in Hawthorn and they were really supportive.”
Santina said Yellow Espresso was the first Ballarat cafe to use the Axil Coffee blend.
Leo said the souvlaki bar was still operating, to ensure customers had the best of both worlds.
“We had a couple last week come in and the female ordered the avocado smash and the man ordered the lamb souvlaki,” he said.
The pair hope to expand the cafe’s menu in the coming months.
“We want customers to be happy and we will do the best we can to keep them satisfied,” he said.
