Jose Fernandez has firmly stamped the mark of Galicia into the burgeoning food scene of Ballarat.
Since offering only Spanish food at his former premises in the Bridge Mall, the Spanish-born, Venezuela-educated chef has continually delighted punters with the authentic flavours of Iberia.
Now the popularity of Cafe Meigas has prompted a move to larger premises at 33 Armstrong Street North.
The new restaurant has the feel of the original, says Jose, but more space and a bigger kitchen.
“We didn’t move to be fussy,” says Mr Fernandez, “we moved to be better.”
“We are looking to bring in more Spanish wine and beer – things people haven’t been able to get in Ballarat. If I can’t find what I want in Australia, I’ll order it directly from Spain.
“ We have a beer brewed on sea water – el boqueron – I ordered it directly from Valencia.
“But we are also featuring fresh produce from Ballarat and the region.”
Cafe Meigas opened officially on Tuesday night.
