Leading Senior Constable Nicole Munro, 47, and Senior Constable Steven Repac, 27, have pleaded not guilty to assault charges stemming from the incident on January 15.
Repac has pleaded not guilty to five counts of assault, while Munro has pleaded not guilty to one count of assault.
The pair fronted the County Court in Ballarat on Wednesday for the start of the trial.
Six women and six men were selected from the jury pool to decide whether the accused are guilty or not guilty of the charges.
Judge Paul Lacava told the jurors their role was to decide the facts in the case and abide by the law of the facts to decide if the accused are guilty or not guilty.
He reminded the jury the prosecution must prove all of the elements of the assault charges to return a guilty verdict.
Judge Lacava said the case had received publicity, particularly in Ballarat.
The prosecution and defence counsels will give their opening addresses on Thursday morning, followed by witness’ evidence.
