Bobby Slater has been charged with 17 offences in relation to the alleged crime spree from December 2017 to February 2018.
Police allege the 29-year-old tried to force entry into six businesses in and around Ballarat, stealing items from those he accessed.
A man wearing a hooded jumper was captured on CCTV at the various businesses.
This jumper and other clothing items the man was wearing in the footage was found at Slater's Ballarat home during a police search in February.
But Slater told the Ballarat Magistrates Court on Wednesday he did not want to plead guilty to the charges or accept a sentence indication of a community corrections order and justice plan.
He will return to court in March for a contested hearing.
