She will begin a new role as executive director for redevelopment and infrastructure with Ballarat Health Services, leading the Ballarat hospital's $460m expansion.
Ms Robertson, who has a background in major renewable energy projects, led the committee for three years.
She said she felt "mixed emotions" at the announcement.
"It's been an incredible privilege to lead the committee," she said.
"I've met all sorts of people and had all sorts of conversations about the future of our region."
The role will move her from advocacy for improved services to delivering those services, she added.
"It's about delivering on-the-ground infrastructure - these are the things we advocate for," she said, noting the synergies between the roles.

Committee chair Nick Beale said Ms Robertson had a huge effect on the region, particularly in the renewable energy sector.
"It's one of the (committee) members' key projects, culminating in the G-NET (Grampians New Energy Taskforce) process," he said.
"There'll be projects in wind and solar, with western Victoria being the hotspot for that, so we're hoping part of her legacy will be the establishment of the renewables training centre in BWEZ.
"That will again help our community, and our members, for people trying to get training for jobs and hopefully more economic investment because of that."
He added a search for a replacement had begun.
"It's a big hit, but I'm sure there's lots of people that would be keen to take on the role," he said.
