Police allege staff at the Sebastopol Bowling Club and Ararat RSL were threatened with what is believed to be a knife and forced to hand over cash.
The Sebastopol Bowling Club was allegedly targeted on October 29, while the Ararat RSL was targeted on October 21 and November 18.
A Sebastopol man, a Melton West man and a woman were charged over the armed robberies and attempted armed robberies.
Robert Williams and his co-accused Adele Young appeared in the Ballarat Magistrates Court on Thursday for a committal mention.
Williams' lawyer Alexandra McLure said her client had made an offer to resolve the charges, but the prosecution rejected that offer.
"Resolution discussions have stalled," Ms McLure said.
She requested the case be adjourned for a contested committal hearing.
The court was told Young was allegedly an accomplice in the three armed robberies and one attempted armed robbery.
Her barrister Zubin Menon sought to adjourn the case for a contested committal hearing.
A contested committal hearing was set down for August 1. The third co-accused, Justin Hastie, will also appear for the hearing.
During the hearing, the magistrate will determine whether there is enough evidence from the prosecution for the case to go to trial before a County Court jury.
Williams made no application for bail on Thursday and was remanded in custody until August 1.
Young's bail was extended with conditions she continue reporting to police twice a week.
Hastie remains in custody.
Before Williams' video link ended, he told Young he loved her, to which she replied, "love you".
