Coffee Exchange by Mr Black will see 10 popular bars across the city vie for the title of best espresso.
Mayor Samantha McIntosh checked out some of the competition for Saturday night's event at The Lost One's Bar in Camp Street on Wednesday.
"I think it's fair to say Ballarat is widely known for two things, its beautiful heritage landscapes and its burgeoning food and wine culture," she said.
"Combine the two and you create an experience like no other.
"This Ballarat Heritage Weekend you can expect a uniquely heritage-infused foodie phenomenon that will be showcased in our iconic heritage buildings and complimented by vintage fashion and entertainment that provides a truly immersive experience for our visitors.
For the first time, we're extending what's on offer into the night - showcasing all our city has to offer and encouraging visitors to stay the night."

Among the bars competing are Mitchell Harris, Workshop Cafe, Hop Temple, Moon and Mountain, Kittelty's, Café Sidra, Healthy Hub, Lola @ The Provincial, Freight Bar, The Canberra Hotel, Il Picollo Gelato and The Lost One's.
The Lost One's bartender Sophie Padget said Saturday night's cocktail would be slightly different to the usual cocktail served.
"We make an espresso martini pretty much every shift, it's one of our most popular cocktails," she said. "Everyone loves them, it's a good pick me up drink to have.
"It's going to have a little bit of coconut, a little bit of spiced rum, so it's going to be a different palette adventure for those who try it."
Coffee Exchange by Mr Black will take place at The Mining Exchange on Saturday night from 7.30pm.
