Doveton Street's Underbar holds 16 seats and only two sittings per week, with dinners booked out a month in advance.
Originally from Darwin, chef Derek Boath has worked in kitchens across Melbourne and Sydney, cutting his teeth at the three Michelin star restaurant Per Se in New York, operated by famed chef Thomas Keller.
Mr Boath and his wife Lucy Taylor began cooking out of their own space at 3 Doveton Street North in mid-2017 after operating for more than six months out of the nearby FIKA Coffee Brewers site.

Iconic Daylesford restaurant Lake House again received two chef's hats at the Good Food Guide Awards, continuing it's 35 year tradition of hospitality success.
Modern Japanese restaurant Kazuki that moved from Daylesford to Lygon Street in December also received one hat.
Brae in Birregura was awarded the Vittoria Coffee Restaurant of the Year.
