Kayla Ann Itaoui, 30, the daughter of Sanity owner Ray Itaoui, has been charged over an alleged domestic violence incident involving her husband Adam Allam in August.
Police allege Mr Allam was driving in Sydney's inner west when Itaoui produced a knife and stabbed him in the head and neck.
The Five Dock woman is facing one charge of wounding with intent to cause grievous bodily harm after the alleged incident at Homebush West.
She is yet to enter a plea.
Itaoui's solicitor Serae Kopra told Burwood Local Court on Wednesday it was clear Mr Allam would not be providing a statement to police.
As a result, police had been forced to subpoena Royal Prince Alfred Hospital for his medical records.
Ms Kopra said these documents could help prosecutors prove wounding, but it could not help them show intent.
Itaoui was arrested on the day of the alleged attack and later charged.
Police are also seeking an apprehended violence order against her to protect her husband.
She will next come before Burwood Local Court on February 2.
